Il Lime Oil is cold pressed from fresh whole California limes and Arbequina olives. They had crudo in mind when they created Il Lime Oil, but it's also a delicious condiment for avocado toast, corn on the cob, grilled shrimp and nutty Thai curry!
Il Lime Oil is what the olio industry likes to call a "co-mill", where we actually mill fresh, whole, limes and just-harvested Arbequina olives together, to create a pure lime-olive oil that both concentrates flavor and reveals the complexity of each fruit. Co-milling method yields an oil that is vibrant, nuanced, and assertively fruit-forward.
